The environments in which we live, work, and play have an impact on what we eat—both the quality and variety of what’s available as well as the cost. As globalization and digitization increase, innovations are progressively changing the way food is produced, processed, packaged, delivered, and consumed, and waste disposed of. But how far can digitization go, and what’s gained or lost in the process? How can we scale the food system for personal and planetary health? Panelists representing stakeholders from across the food system will discuss the outlook for our evolving food environments, and will propose means of making them more nutritious, sustainable, resilient, and equitable.
